Pancake Tuesday

Today is Pancake Tuesday, also known as Shrove Tuesday; a traditional event whereby Christians use up leftover food before the fasting season of lent begins the following day on Ash Wednesday.
A pancake is a thin layer of batter which is fried on both sides, and smothered with a sweet or savoury filling. Popular fillings include chocolate, maple syrup, peanut butter, bananas, sugar and lemon or even cheese!
How to make Pancakes:
Ingredients:
100g plain flour
2 eggs
300ml semi-skimmed milk
1 tablespoon of sunflower/vegetable oil
A pinch of salt
A choice of topping
Method:
- Place the flour and salt into a mixing bowl, and create a gap in the middle. Crack both eggs into the middle of the mixture, and add the oil and 50ml of milk.
- Start whisking from the middle, gently incorporating the entire mixture (you can do this either with a wooden spoon or with a whisk).
- Beat until the mixture is smooth and thick.
- When the mixture resembles a paste, add another splash of milk and whisk again.
- Continue whisking whilst adding in the remainder of the milk. Continue until the batter looks like a thick cream.
- Heat a frying pan and a small amount of oil.
- Pour a small amount of mixture into the pan. Leave for 30 seconds. Then flip the pancake and cook for another 30 seconds on the other side. Both sides should be golden.
- Take the pancake from the pan and cover in delicious toppings of your choosing!
Tip: To flip the pancakes, hold the pan handle and use a fish slicer to quickly lift and turn the pancake. Ensure the fresh side of the pancake is flat against the pan with no folds in it.
